  • Four poussin chickens
  • Three tbsp. divided olive oil
  • Pepper and salt to taste
  • One quartered lemon
  • Four rosemary sprigs
  • Five tbsp. white wine
  • Five tbsp. chicken stock
  • Additional four rosemary sprigs to garnish
  • 24 garlic cloves


Follow the directions below to have food ready to eat in just under 1.5 hours. Preparation should only take about 20 minutes, while the rest is waiting on the food to cook. This saves you on preparation time and lets you do other things around the house as your meal cooks.

Begin by heating your oven to 450 degrees F.

Rub all of your poussin chicken with olive oil. Add salt and pepper to taste. In the cavity of each bird, add in one rosemary sprig and one lemon wedge. Arrange all of your birds into a large roasting pan. Put all of the garlic around them nicely. Place into your oven and allow to cook for 25 minutes.

Reduce the temperature to 350 degrees F. Whisk the wine, remaining oil and chicken stock together in a bowl. Pour your mixture over all the birds. Roast an additional 25 minutes or until all of the juices are clear. Make sure you baste your birds every 10 minutes.

Transfer your poussin chicken onto a platter. Empty any remaining juices out of the cavity and into the roasting pan. Use foil on the birds to make sure they stay warm while you finish the dish. Take all of the garlic cloves and juices and put them into a saucepan. Boil for about six minutes or until all of the liquids have thickened into a sauce-like consistency. Cut your birds in half and put them out on plates. Spoon your sauce over your birds. Add the last four rosemary sprigs and you are good to go.
